Croque Monsieur

Serves: 2

4 Bread slices; thick
Dijon Mustard to taste
5 oz Ham; sliced
6 oz Gruyere Cheese; sliced and separated
4 tbsp Butter; melted
1 tsp Vanilla
1 cup Cream
2 tbsp Flour
1 tsp Salt

In a small saucepan, add melted butter over medium heat. Whisk in flour, vanilla, salt, and cream.

Set aside sauce and begin to prepare sandwiches. Spread mustard to taste on all four slices of bread. Top with even amounts of ham and Gruyere, leaving 2oz of Gruyere aside for later use. Create sandwiches and place in a large pan with butter, allowing both sides to lightly brown. Carefully remove sandwiches and place on a cookie sheet. Add sauce to the top of each sandwich and remaining Gruyere. Place in oven for 5-8 minutes, or until cheese has melted and lightly browned. Carefully remove and serve as full sandwiches or slice into bite-sized pieces and plate as an appetizer with toothpicks. Serve with Clos du Bois Chardonnay and enjoy!
