Garlic Shrimp Zoodles

Serves 2

2 medium zucchinis, spiralized
10-12 large prawns, tails on, peeled, deveined
1 tbsp. olive oil
6 cloves garlic, minced
Pinch hot pepper flakes or to taste
2 cups multi-colored cherry tomatoes, halved
Juice and zest of 1 lemon
1 handful flat leaf parsley, roughly chopped
Hot pepper flakes, chopped parsley, lemon zest to garnish
Salt and pepper


  1. Season prawns with salt and pepper
  2. Add 1 tbsp. olive oil to a large frying pan on medium-high heat
  3. Add garlic and pepper flakes
  4. Add prawns and cook, turning, 2 min until somewhat opaque
  5. Add cherry tomatoes and cook 30 sec until beginning to soften
  6. Add zucchini noodles and season well
  7. Toss and cook 1-2 minutes until warmed through and al dente
  8. Stir in lemon zest, juice, and parsley
  9. Serve topped with prawns and more parsley, chili flakes and lemon juice, and a glass of Clos Chardonnay
