Mini Muffin Tray Quiches

Makes 1 Dozen

1 pie crust
8 eggs, beaten
1 cup heavy cream
1 1/3 cups grated cheddar
1 cup mushrooms, diced
1/2 cup onion, diced
1/2 cup tomatoes, diced
1 cup ham, cooked and chopped
1 1/2 tsp Old Bay Seasoning
Salt and pepper to taste

Preheat oven to 375°F. After spraying a muffin tin with nonstick spray, cut pie crust into circles. Fit the crust into each cup on the muffin tray. Whisk the eggs and heavy cream together, before mixing in Old Bay Seasoning, salt and pepper, and cheese. Carefully pour the mixture into each muffin cup. Separately mix cooked and chopped ham, diced mushroom, onion and tomato, before adding a spoonful(s) to each muffin cup. Ensure the mixture is evenly dispersed across the tray. Bake for 20-25 minutes. Let rest for 5 minutes before serving with a glass of Clos du Bois Chardonnay.
